The Chef Upstairs Field Trip

On Friday the 26th, TSS Students went on their January field trip to The Chef Upstairs. As a school the students learned science through cooking a three-course meal; smash burgers with a side of fries, Caesar salad, and chocolate chip cookies. 

The homemade buns taught them about rising agents and chemical reactions, the smash burgers that came with this allowed them to work with protein structure, Maillard reactions and caramelization. The next course, a Caesar salad taught students about emulsions through the dressing making process. Finally, students learned about baking specific rising agents and ingredients as well as the importance of fat and sugar when baking chocolate chip cookies. 

In addition to learning the science, students also gained hands-on experience in cooking, specifically chopping and dicing, mixing, seasoning, and frying foods.

 

This trip was delicious, scientific, and practical.
